Sometimes I feel that people talk about espresso coffee and drink it only to show off the latest model of the espresso machine they've got. Do not take me wrong they look great and can make very good coffee, but what happened with the simple Turkish coffee. It has a great task, it's easy to make and you do not need a huge machine that takes most of the counter space in you kitchen.

Do not take me wrong, they look great and can make very good coffee. But most of the time it takes a lot of practice to figure out the way to make the best cup of espresso. On the other hand, you have people who drink coffee only as excuse to go to the coffee shop around the corner.

What happened to the Turkish coffee? It has great taste, it's easy to make and you do not need a huge machine that takes most of the counter space in your kitchen. I heard people say “but it's too strong”. It is only as strong as you make it. It does not take any longer to make a cup of Turkish coffee than it takes to make a cup of espresso.

Here are some basics for the people who are willing to give it a try:

1. Take the smallest pot that you have. If you want, you can buy a coffee pot in the local ethnic store.

2. If you would like to make two cups that are the same size as the espresso cups, put 2 1/2 cups of water and allow it to boil.

3. If you are a real coffee drinker, you will not add any sugar, otherwise add 1 or 2 teaspoons of sugar.

4. Take that boiling water and fill up one of the little cups.

5. Add 2 to 2 1/2 teaspoons of Turkish coffee (very finely ground coffee) to the water in the pot.

6. Mix it well and put the pot back on the heat.

7. Make sure that you are watching it at all times, because when coffee is ready it will start rising.

8. Take it off the heat and add back the water from the cup.

9. Mix it well and return the pot to the heat.

10. As soon as coffee start rising again take it off the heat and it's ready to drink.

Depending own strong or week coffee you like that is how much coffee you need to add. Normally, one teaspoon per cup of coffee. For some extra flavor add to the total number of cups the 1/2 teaspoon. Please do not use the measuring teaspoon. You'll get best results if you use regular teaspoon that you use to eat yogurt with.

As you can see it is simple. Try it and you are going to love it. If you have a few extra friends to share it with, it tastes even better.
